Aretha's Every Texture Apple Pie

I've always had a soft spot for saucy apple pies (think mcds), but also appreicate the loaded homestyle pie. So, I combined both! Also instead of a classic pie crust topping I opted for puff pastry for added texture. Here's Aretha's Every Texture Apple pie!




 

Ingredients

16 apples

2 tbsp lemon juice

Water

1 cup cornstarch

1 1/2 cup sugar

1 (+1/4) cup brown sugar (packed)

1 (+1/2) tbsp cinnamon

1/2 (+1/4) tsp nutmeg

2 tbsp flour

Pie crust (4 total)

2 sheets puff pastry


Steps

Wash, peel, core and thinly slice apples

Toss apples in lemon juice to prevent browning, separate 1/4 apples to a separate bowl

Bring water, conrstarch, sugar and 1st portions of brown sugar (1 cup), cinnamon (1tbsp), nutmeg (1/2 tsp) to a boil

When thickened, add large portion of apples (3/4 of total) into the pot and let simmer for 10 minutes

Prebake pie crusts (~10 mins)

Let crust and filling cool, fill the crusts

For the smaller portion of apples, toss in flour and remaining brown sugar, cinnamon, and nutmeg.

Cover pies in the raw apples, mounding more towards the middle

Score puff pastry into thin strips, and create weave on top of pies

Bake pies for 30 minutes

Let cool and EAT
