Basic Karaage Recipe

Here's a basic karaage recipe for the best fried chicken you can make!


 

Recipe

  • 2lbs Boneless SKIN ON chicken thighs

  • 1tbsp Sake

  • 1tbsp Soy sauce

  • 2 cloves Garlic

  • 1/2 tsp Hondashi powder

  • Flour (AP)

  • Potato starch


  1. Cut chicken thighs into large (50g) pieces

  2. Add minced garlic, a tablespoon soy sauce, 1 tbs sake, and 1/2 tsp of dashi powder

  3. Marinate for 30 mins

  4. Flour your chicken pieces lightly

  5. Dust off excess and dredge in potato starch

  6. Fry at 325 F until light gold colour (about 2 minutes)

  7. Fry again at a slightly higher heat (350) until golden brown (about 2 minutes)

  8. Serve with kewpie mayo
