Here's a basic karaage recipe for the best fried chicken you can make!
Recipe
2lbs Boneless SKIN ON chicken thighs
1tbsp Sake
1tbsp Soy sauce
2 cloves Garlic
1/2 tsp Hondashi powder
Flour (AP)
Potato starch
Cut chicken thighs into large (50g) pieces
Add minced garlic, a tablespoon soy sauce, 1 tbs sake, and 1/2 tsp of dashi powder
Marinate for 30 mins
Flour your chicken pieces lightly
Dust off excess and dredge in potato starch
Fry at 325 F until light gold colour (about 2 minutes)
Fry again at a slightly higher heat (350) until golden brown (about 2 minutes)
Serve with kewpie mayo
