Egg Salad Sandwiches from Beastars

Thank you Legom for providing eggs. A super simple Japanese Egg Sando Recipe!


 

Recipe:

  • 2 slices japanese sandwich bread,

  • 3 eggs

  • Kewpie Mayonaise. *For 1/4 cup reg. mayo, add 1/4 teaspoon rice vinegar and 1/8 tsp sugar)

  • 1/4 tsp dijon mustand

  • Salt

  • Pepper

  • Butter


  1. Medium boil your eggs. Around 9 minutes of boiling time

  2. Mash your eggs.

  3. For 1/4 cup mayo: I have regular mayo, so I'm adding a bit of rice vinegar and sugar to make a substitute kewpie mayo. If you have the good shit, you don’t have to do this step

  4. Add salt, pepper, mustard and mayo to eggs

  5. Spread butter on your sandwich bread (forgot this step in the video!)

  6. Assemble, spreading the salad generously, cut off crusts, and cut it down the middle
